Dijon Mustard Vinaigrette

Dijon Mustard Vinaigrette
Makes approximately 1 1/3 cups

¾ cup extra virgin olive oil
¼ cup white wine vinegar
¼ cup Dijon mustard
1 small red onion, quartered
1 – 2 large cloves garlic, minced
Salt and pepper to taste

Blend all ingredients in a blender or processor until smooth. 
Season to taste with salt and pepper
Best if prepared 24 hours prior to use.
