Blueberry Chicken Salad

 

Blueberry Chicken Salad
4 servings
Ingredients
5 cups salad greens
1 ½ cups roasted skinless, boneless chicken breasts, cubed
1 small red onion, sliced
1 cup fresh Organic blueberries
¼ cup crumbled feta cheese
2 tablespoons chopped pecans, toasted
For the Dressing:
2 tablespoons apple cider vinegar
¼ cup extra virgin olive oil
¼ cup organic silken tofu, soft
Juice of 1 medium orange
½ teaspoon sea salt
½ teaspoons granulated garlic
¼ teaspoon black pepper
¼ teaspoon crushed red chili peppers

Method
Combine salad greens, chicken, blue berries, feta cheese and pecans in large bowl. Place salad ingredients in a blend or using a whisk blend until combined.
Add dressing to mixture; toss gently. Sprinkle with cheese and pecans.
