A Late Start to My Meatless Monday

Breakfast:  Gingerbread Pancakes
     Lunch:  Black Bean Burger
    Dinner:  7 Layer Salad
     Snack: Bok Choy Smoothie


 Gingerbread Pancakes
Serves 4
Ingredients
1 ½ cups all purpose flour
¼  cup dark brown sugar
2 teaspoons baking powder
½  teaspoon baking soda
1 tsp cinnamon
1 tsp ginger
¼ teaspoon nutmeg
¼ teaspoon ground cloves
¼ teaspoon salt
1 cup milk
2 tablespoons molasses
2 large eggs
1 tablespoon butter, melted and cooled

Method
Sift all the dry ingredients into a bowl.
In a separate bowl whisk the liquid ingredients.
Add the flour mixture to the liquid mixture and whisk until just combined; do not over mix.
Let the batter stand for 10-15 minutes to thicken.
Place 2 tablespoons of the mixture in a large, greased sauté pan over medium heat and cook for 2-3 minutes on each side.

Note:  Once the pancakes are done, you can take gingerbread men cookie cutters and cut them into the shape of gingerbread men.
 
The Ultimate Black Bean Burger
6 Servings

Ingredients
3 garlic cloves, smashed
1 jalapeno pepper, seeded, roughly chopped
½ small red bell pepper, roughly chopped
1 small red onion, roughly chopped
3 cups basic black beans
½ teaspoon crushed red chili peppers
1 teaspoon ground cumin
1 teaspoon dried oregano
¼ cup fresh cilantro roughly cut
2 tablespoons vegan mayo
½ cup panko bread crumbs
3 tablespoons vegetable oil – for frying

Instructions
Place garlic, jalapeno, bell pepper and onion in a food processor and pulse for 3 pulses, scrape down the sides of the bowl then pulse another 3 times. 
Carefully drain off the juice that has accumulated (the excess juice will make patties too moist).
Reposition bowl back on the food processor then add half the black beans, all the dry seasonings, cilantro, vegan mayo and bread crumbs.
Pulse in food processor until mixture takes on the consistency of a thick coarse puree.   Transfer mixture to a bowl, stir in the remaining beans and mix thoroughly.
Separate mixture into 6 equal parts.  Roll each part into balls then form them into patties.
Place patties on a sheet pan and refrigerate at least 1 hour to let patties set before cooking.
Heat a skillet and oil over medium high heat until it shimmers.  Add patties and cook until browned, approximately 3 minutes.
Turn patties and cook on the other side another 3 minutes.
Remove patties from pan and serve with all the fixings just as you would a hamburger or any other patty or Serve on a bed of Spring salad mix.

For the Spread
2 cups * Vegan Mayonnaise
½ teaspoon ground chipotle or cayenne pepper
2 tablespoons apple cider vinegar
The Salad
1 head romaine lettuce, shredded
1 English cucumber, diced
1 large red bell pepper, diced
8 oz. frozen corn/peas, rinsed
3 large fresh tomatoes, thinly sliced
4 oz. extra sharp cheddar cheese, grated 

*We’re aiming for a spread healthier than traditional mayonnaise i.e. a mixture of olive oil and vinegar (equal parts); pureed avocados, lemon, and orange juice, etc.

Method
In a medium bowl or food processor mix together the ingredients for the Spread.
In a glass casserole dish or a bowl, layer the salad ingredients starting with the lettuce then the cucumber, red pepper and the corn or peas.
Then pour on the spread, distributing over the top layer, sealing around edges.
Add a layer of tomatoes and sprinkle the cheese over the top.
Cover with plastic wrap and place in refrigerator overnight, for flavors to permeate.
Please do not toss before serving. 
A very beautiful and tasty salad, perfect for potluck and church dinners! 



 Bok Choy Smoothie
2 Servings
Ingredients:
1 cup soy milk, plain, unsweetened
1/2 teaspoon lemon extract
1/2 teaspoon ginger, ground
1 tablespoon chia seed or flax seed
1/2 cup pineapples, diced, fresh or frozen
1/2 cup blueberries, fresh or frozen
1/2 cup strawberries, fresh or frozen
1 medium apple, cored, diced
2 small bunches baby bok choy (6" long)

Method:
Place all ingredients in a blender begin processing on a low speed, when all ingredients are broken up process on the highest speed.
Make sure a vortex is occurring, if not add filtered water 1/4 cup at a time.
Process 3 - 5 minutes or until drink is the consistency of pudding.
