Curried Parsnips

Curried Parsnips
4 Servings
1½ pounds parsnips, peeled, sliced or cubed
2 tablespoons olive oil
½ medium onion, diced, fine
1 tablespoon curry powder
½ cup vegetable stock
½ teaspoon sea salt
freshly ground black pepper to taste
3 scallions, sliced
¼ bunch cilantro, coarsely chopped

In a large skillet over medium flame, heat the oil; add the onions and cook, stirring constantly for 1 minute. 
Add the curry powder and mix thoroughly. 
Add the stock, salt, pepper and parsnips, mix thoroughly and simmer covered over low heat until tender, about 10 minutes.
Stir in the scallions and garnish with cilantro prior to serving.
